WE have gotten plenty of rain here in the Rio Grande Valley of South Texas. He had Hurricane Hannah visit US in late July! Extra rainfall.
This means WE will have access to tender cactus also known as Nopalitos.
How about some Nopalitos and egg for breakfast? How about a Nopalitos salad for lunch? In tacos. With shrimp! In a soup! Even in a smoothie!
